Man Food Lunch



I am cutting it down to the wire for my at least-weekly-and-by-Sunday contribution. I was so excited last weekend when we decided to have the blog! And, I look forward to making Leah's first recipe, the breakfast casserole!!

The recipe I am including came from my friend, Lucy. She made these sandwiches when we visited Put-In-Bay last summer.She also sent them along when the boys went to P.I.B. for Seth's bachelor party. Seth said, "We were supposed to eat them when we were up there, but we ate them on the way!" This is the reason I call it "Man Food Lunch." Men love them! You don't typically think of a packed lunch of being something you get compliments on, but this one is a crowd pleaser. I took these along this weekend and they went over really well.

Ingredients
1 loaf Hawaiian Bread
1 Brick Cream Cheese (softened)
1/2 pound shaved turkey
1/2 pound shaved ham

Allow the cream cheese to soften either in the microwave or by sitting out for a while. Cut the Hawaiian bread into three layers. Spread 1/2 of the brick of cream cheese on the bottom layer and spread all of the shaved turkey on top of the cream cheese. Place the middle layer of bread on top of the turkey and spread the other half of cream cheese on top of the middle piece of bread. Next spread the shaved ham on top of the cream cheese. Place the last layer of bread on top. Cut the entire sandwiches into eighths by cutting it in half, then in half, then in half again.

Enjoy! You can make this a day ahead or on the day you plan to serve it!

Cream Chicken Sandwiches

Okay we said we could put things down that are "no brainers" so I thought I would add one: Cream Chicken Sandwiches.  Personally, I can barely get these things down because of a HORRIBLE experience in college... however wanted to have something in the crockpot today while Matt worked on our laundry room so he could grab a quick bite when hungry. 

Canned Chicken (I think I used (2) 12.5oz)
98% Fat Free (Mom would be proud) Cream of Chicken
1/4 cup bread crumbs

I've never put bread crumbs in mine before and it seemed to always come out runny so this was an easy and quick fix.  Consistency was perfect!

Risky Business

Tonight I made my first breakfast casserole.  Why, you might ask, is this risky business? Well, I volunteered myself to make breakfast for our quarterly morning meeting at work tomorrow.  Not only will it be my coworkers who I see everyday that will be attending this meeting, but a family physician, orthopedic surgeon, psychologist and a pharmacist.  I usually (always) just get fresh doughnuts and if I'm in a really good mood fresh fruit or yogurt to go with it.  I felt like being domestic today.  Here is the recipe I used for tomorrow's breakfast casserole. I didn't change anything, just doubled it!  I found it on allrecipes.com! And NO, I didn't use anything low-fat or fat free (one of my coworks requests- she knows me too well :) )

Amish Breakfast Casserole

  • 1 pound sliced bacon, diced

  • 1 medium sweet onion, chopped

  • 6 eggs, lightly beaten

  • 4 cups frozen shredded hash brown potatoes, thawed

  • 2 cups shredded Cheddar cheese

  • 1 1/2 cups small curd cottage cheese

  • 1 1/4 cups shredded Swiss cheese

  • Directions

    1. In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
    2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting

    The recipe said this makes 12 servings but the reviews said it's more like 6-8.

    The Day of the Blog Creation

    Last night when I read the email about getting the blog set-up I told my husband about our recipe club.  He looked at me with a blank stare and then laughed.  I said "What?!" and he replied to me "That is the funniest thing I've heard! Sarah doesn't even cook, she eats at restaurants or orders out and  you just copy all of your recipes from Weight Watchers.  Shortie cooks like it's 1892 and uses real bacon grease on everything. What are you guys going to share?" I laughed too! :)
